Cooking class with La Ciuenda
In Pocapaglia a small village near Bra we undertake a cooking experience with Cristina of La Ciuenda, a small family run business making traditional food and sauces of Piemontese origin. From the farm to the plate all processes are done with respect to traditions and nature excluding any use of additives. Cristina and her family are passionate about producing food and source most of the products from their own farm and cook in a traditional piemontese style. The farm boasts a wide range of products hazelnuts, fruits and vegetables all made into delicious preserves and jams including rose, acacia, fruits,:compotes including peaches in moscato d’asti; sauces and creams to accompany meat and cheese including cugna’ di Barbera and other delights from Piemontese gastronomy (peppers with truffle, bagna cauda)
We will spend the morning with Cristina and her family as they make traditional piemontese dishes such as Torte di nocciola ( hazelnut cake), Bagna Cauda (an anchovy “dip” served with vegetables in a fondue style, salsa verde and anchovies and pepperoni and tartufo ( peppers and truffle).
After a morning of cooking, and chatting with Cristina about the origins and traditions we will sit down and enjoy the fruits of our labour!
